Spiral cookies

Ingredients
  • 200 g butter (Room temperature)
  • 125g white sugar
  • 350g all-purpose flour
  • 1 egg white
  • 1 teaspoon of lemon juice
  • A pinch of salt
Ingredientes
  • 200g de mantequilla a temperatura ambiente
  • 125g de azúcar blanca
  • 250g de harina
  • Una clara de huevo
  • Un cucharadita de zumo de limón
  • Una pizca de sal
Instructions

Pre-heat oven to 180ºC / 350ºF.
Precalienta el horno a 180ºC / 350 ºF.

Mix all the ingredients. Then, split the dough in two and add food coloring to one them.

Roll both doughs on different anti-adherent papers. If the dough is sticky and doesn't roll very well, don't lose your mind. Remember it's not a pizza, you may not be able to just roll in every direction like crazy. Just gently roll a couple of times in just one direction and then in the opposite one.

Place one dough on top of the other. You can cut the ends to get straight borders. Then, simply start rolling both doughs at the same time.

TIP: If the dough at the bottom is stick to the paper, place the other paper in top of it and turn it upside down, so that you'll have the doughs on the other paper.

Wrap the dough with the paper and put it in the refrigerator for half an hour. Then slice the dough and place each slice on a paper. I used a cake layer slicer to get a nice and clean cut.

You can give them a more rounded shape with your hands when you do that. Make sure you leave a nice separation between them, because they do spread and you don't want them to join together and lose their round shape (like it happened to me)

Bake them for about 9 minutes. They may seem uncooked, but they're fine. Just let them cool before removing them from the paper.

When I was doing this, I realized they kind of looked like lollipops, so I inserted some sticks into two of them before putting them in the over and... I MADE LOLLIPOP COOKIES!
